A Great Range With All…

We had to wait a looooooooong time for this to be delivered (thanks, COVID), but it's finally here, and it is everything we hoped it would be.
The advantages of induction over electric are numerous. I compared the time to boil four cups of water (cold from the tap) on the most powerful burners on both my electric and induction ranges. For electric, it took 5 minutes, 25 seconds. For induction, it only took 1 minute, 51 seconds! Additionally, temperature changes are extremely responsive. This is something that is similar to gas, but it blows the pants off electric. As we have small children, another big benefit is that the hobs are not molten-lava-hot after cooking.
Compared to electric or gas, there are a few disadvantages. The first and most obvious one is that you need compatible cookware. If you are just starting your cookware collection or you have compatible cookware already, this might not be a big deal, but if you spent a lot of money on copper or non-stick cookware, you might have to shell out a good amount of money in addition to an already very expensive range. Secondly, there are no "half stops" between the numbers, so you only get nine levels of cooking. This is frustrating as some of the other models on the market do not have this limitation, and sometimes it can be very difficult to get a simmer going as it goes between "boil" and "hot." Again, not an issue on gas or electric. Finally, there is only one "large" burner, and the next biggest size is still fairly small, so cooking a pot of pasta and making a sauce in a saucepan is hard as the hob is way too small for one of them.
The actual double oven is exactly what we expected. The Flex Duo is great, and the temp probe is great for things like a roast or lasagna. Air frying works wonderfully and can save a good amount of time vs. conventional methods. It's weird to me that they did not include two racks and instead only included one rack and one pull out shelf. This makes sense if you are using the Flex Duo divider, but if you aren't, you really need one more rack in the oven. Not a big deal as you can buy another one, but just a weird decision.
SmartThings integration works as advertised. I do wish it could be preheated remotely without pressing a button on the front of it, but I understand the reasons for implementing it that way. Overall, a very good range if you can afford it. Hard to find one on the market with more features.
